Can someone explain why Stinson used the metal COILS on the brake master cylinders? I dont understand the need for them as other aircraft with Cleveland brakes just have a AN hose from the master cylinder to the brake caliper.

This was Stinson's way of handling the flex required between the master cylinders and the fixed brake lines. Mine have lasted more than 75yrs. Far outlasted flexible brake hoses.  :-}

Knowing that the OEM Goodyear and Scott master cylinders had the MALE connection to join the female end of the Coil, I wonder if you could use a standard female master cylinder direct to a flexible brake line and eliminate the coil?
